👨🍳 Instructions
- Roast poblano peppers over an open flame, under a broiler, or on a hot griddle until the skin is charred and blistered all over; place them immediately in a plastic bag to steam for 10-15 minutes.
- Once cooled, carefully peel the skin from the peppers, make a slit down one side, remove the seeds and veins, being careful to keep the pepper intact.
- Stuff each poblano pepper generously with Oaxaca or Monterey Jack cheese.
- Lightly dust the stuffed peppers with all-purpose flour, ensuring they are evenly coated.
- In a large bowl, separate egg whites and beat them until stiff peaks form; then, gently fold in the egg yolks and a tablespoon of flour to create a light batter.
- Heat vegetable oil in a deep skillet to about 350°F (175°C). Carefully dip each floured, stuffed pepper into the egg batter, ensuring it's fully coated.
- Fry the peppers for 2-4 minutes per side, or until the batter is golden brown and crispy. Drain on paper towels.
- Serve immediately with a mild tomato sauce on the side.
