  • Fresh Clams 500 g · 89 kcal
  • Olive Oil 20 g · 180 kcal
  • Garlic 10 g · 15 kcal
  • Dry White Wine 100 g · 80 kcal
  • Fresh Cilantro 10 g · 2 kcal
  • Lemon 30 g · 9 kcal

👨‍🍳 Instructions

  1. Clean the clams thoroughly under cold running water, discarding any open clams that don't close when tapped. Soak them in salted water for at least 30 minutes to purge any sand, then rinse again.
  2. In a large, wide pan, heat the olive oil over medium heat. Add the minced garlic and sauté gently for about 1 minute until fragrant, being careful not to brown it.
  3. Add the cleaned clams to the pan along with the dry white wine. Season with salt (to taste, considering natural clam salinity).
  4. Cover the pan and cook for 5-7 minutes, shaking occasionally, until all the clams have opened. Discard any clams that remain closed.
  5. Remove from heat, stir in the freshly chopped cilantro, and squeeze fresh lemon juice over the clams. Serve immediately with crusty bread for dipping in the delicious sauce.
