👨‍🍳 Instructions

  1. Thoroughly rinse fresh cockles under cold running water, scrubbing gently to remove any sand or grit. Discard any cockles that are open and do not close when tapped.
  2. Place the cleaned cockles in a large pot with about 1 cm of water at the bottom. Cover the pot tightly and steam over high heat for 5-7 minutes, or until all the cockles have opened.
  3. Remove the pot from the heat and discard any cockles that remain closed. Carefully remove the cockle meat from the shells, if desired, or serve them in their shells.
  4. Arrange the cooked cockles in a small serving bowl and generously drizzle with malt vinegar. Serve immediately as a simple snack or appetizer, optionally with a sprinkle of black pepper.
