👨🍳 Instructions
- Rinse the red lentils thoroughly under cold water until the water runs clear; set aside.
- Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened and translucent, about 5-7 minutes.
- Add minced garlic and grated ginger; cook for another minute until fragrant, being careful not to burn.
- Stir in turmeric, cumin, coriander, and chili powder. Cook for 30 seconds, stirring constantly, to toast the spices.
- Pour in the diced tomatoes, vegetable broth, and rinsed lentils. Stir well, bring to a simmer, then reduce heat to low, cover, and cook for 20-25 minutes.
- Stir in the full-fat coconut milk and fresh spinach. Cook for another 5 minutes, or until the spinach has wilted and the curry is heated through.
- Remove from heat, stir in fresh lime juice, and season with salt to taste. Garnish with fresh cilantro before serving.
