- Heat coconut oil in a large pot or Dutch oven over medium heat; add diced onion and sauté until softened, about 5-7 minutes.

- Reduce heat to low, cover, and simmer for 15-20 minutes, or until vegetables are tender.
- Stir in fresh spinach and cook until wilted, about 2-3 minutes. Season with lime juice, salt, and a pinch of sugar to taste.
