👨🍳 Instructions
- In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy; remove bacon with a slotted spoon and set aside, reserving about 1 tablespoon of bacon fat in the pot.
- Add butter, diced onion, and celery to the pot; cook until softened, about 5-7 minutes.
- Stir in diced potatoes and broth; bring to a boil, then reduce heat, cover, and simmer for 10-15 minutes or until potatoes are tender.
