👨🍳 Instructions
- Drain the canned sweet corn kernels thoroughly. In a large bowl, combine the all-purpose flour, baking powder, a pinch of salt, and a pinch of sugar.
- In a separate bowl, whisk the large egg and milk together. Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
- Gently fold in the drained sweet corn kernels. The batter should be thick but pourable. Set aside for 5 minutes.
- Heat about 2-3 tablespoons of vegetable oil in a large non-stick skillet over medium heat. Drop spoonfuls of batter into the hot oil, flattening them slightly.
