🛒 Ingredients

  • Sweet Corn (canned, drained) 400 g · 340 kcal
  • All-Purpose Flour 150 g · 540 kcal
  • Large Egg 60 g · 75 kcal
  • Milk (2% fat) 120 g · 60 kcal
  • Baking Powder 10 g · 0 kcal
  • Vegetable Oil (absorbed for frying) 40 g · 360 kcal

👨‍🍳 Instructions

  1. Drain the canned sweet corn kernels thoroughly. In a large bowl, combine the all-purpose flour, baking powder, a pinch of salt, and a pinch of sugar.
  2. In a separate bowl, whisk the large egg and milk together. Pour the wet ingredients into the dry ingredients and mix until just combined, being careful not to overmix.
  3. Gently fold in the drained sweet corn kernels. The batter should be thick but pourable. Set aside for 5 minutes.
  4. Heat about 2-3 tablespoons of vegetable oil in a large non-stick skillet over medium heat. Drop spoonfuls of batter into the hot oil, flattening them slightly.
  5. Cook for 2-3 minutes per side, or until golden brown and cooked through. Remove fritters from the skillet and place on a paper towel-lined plate to drain excess oil. Serve warm.
