- If using frozen corn, thaw it completely or quickly blanch in boiling water then drain well. If using fresh corn, cut the kernels off the cob.
- Finely dice the red onion, jalapeño (remove seeds and membranes for less heat), and red bell pepper. Roughly chop the fresh cilantro.
- In a large bowl, combine the prepared corn kernels, diced red onion, jalapeño, red bell pepper, and chopped cilantro. Toss gently to mix.
