  1. Wash and trim the green beans, ensuring they fit vertically into pint-sized canning jars; sterilize your jars and lids.
  2. Into each sterile pint jar, place a garlic clove, a dill sprig or teaspoon of dill seeds, and a pinch of red pepper flakes.
  3. Pack the trimmed green beans tightly into the jars, leaving 1/2 inch of headspace at the top.
  4. In a saucepan, combine white vinegar, water, and pickling salt; bring to a rolling boil.
  5. Carefully pour the hot brine over the beans in the jars, ensuring all beans are submerged and maintaining 1/2 inch of headspace.
  6. Wipe jar rims clean, apply lids, and screw on bands finger-tight. Process jars in a boiling water canner for 10 minutes (adjust time for altitude).
  7. Remove jars from the canner and cool for 12-24 hours without disturbing. Check for proper seal before storing in a cool, dark place.
