👨‍🍳 Instructions

  1. Peel and finely grate the potatoes and onion. Place the grated mixture into a fine-mesh sieve or cheesecloth and squeeze out as much excess liquid as possible.
  2. Transfer the squeezed mixture to a bowl, then add the egg, flour, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
  3. Heat vegetable oil in a large frying pan over medium-high heat. Once hot, spoon about 2-3 tablespoons of the potato mixture per pancake into the pan, flattening slightly with the back of the spoon.
  4. Fry the draniki for 3-5 minutes on each side until they are golden brown and crispy. Repeat with the remaining mixture, adding more oil if needed.
  5. Serve the draniki immediately, traditionally with a dollop of sour cream or apple sauce.
