  1. Chop the onion finely; slice carrots into thin rounds or half-rounds and green beans into 1-inch pieces. Mince garlic and grate ginger.
  2. Heat vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sauté until softened and translucent, about 5-7 minutes.
  3. Add the minced garlic and grated ginger to the pot, stirring frequently for about 1 minute until fragrant. Be careful not to burn the garlic.
