👨🍳 Instructions
- Soak dried chickpeas in water overnight, then drain thoroughly. In a food processor, combine soaked chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, and baking soda; pulse until coarsely ground but not a paste.
- Season the falafel mixture generously with salt. Form the mixture into 3-4 patties, about 1-inch thick.
- Heat vegetable oil in a deep skillet or pot over medium-high heat. Fry the falafel patties for 3-5 minutes per side until golden brown and cooked through.
- While falafel fries, prepare the tahini sauce: Whisk tahini, lemon juice, minced garlic (if using extra for sauce), and a pinch of salt. Gradually add ice water until the sauce reaches a smooth, pourable consistency.
- Lightly toast the burger buns. Spread a generous amount of tahini sauce on both halves of the bun.
- Assemble the burger: Place a falafel patty (or multiple if desired) on the bottom bun. Layer with lettuce, tomato slices, red onion, and pickles.
- Top with more tahini sauce and the other half of the bun. Serve immediately and enjoy your homemade falafel burger.
