  1. Soak dried chickpeas in water overnight, then drain thoroughly. In a food processor, combine soaked chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, and baking soda; pulse until coarsely ground but not a paste.
  2. Season the falafel mixture generously with salt. Form the mixture into 3-4 patties, about 1-inch thick.
  3. Heat vegetable oil in a deep skillet or pot over medium-high heat. Fry the falafel patties for 3-5 minutes per side until golden brown and cooked through.
  4. While falafel fries, prepare the tahini sauce: Whisk tahini, lemon juice, minced garlic (if using extra for sauce), and a pinch of salt. Gradually add ice water until the sauce reaches a smooth, pourable consistency.
  5. Lightly toast the burger buns. Spread a generous amount of tahini sauce on both halves of the bun.
  6. Assemble the burger: Place a falafel patty (or multiple if desired) on the bottom bun. Layer with lettuce, tomato slices, red onion, and pickles.
  7. Top with more tahini sauce and the other half of the bun. Serve immediately and enjoy your homemade falafel burger.
