👨‍🍳 Instructions

  1. Rinse farro under cold water. Cook according to package directions in a pot of salted boiling water until al dente, about 25-30 minutes. Drain well and let cool completely.
  2. While farro cools, prepare the other ingredients: dice the apple and celery, chop the walnuts, and finely chop the fresh parsley.
  3. In a small bowl, whisk together the olive oil, apple cider vinegar, Dijon mustard, and maple syrup. Season the dressing with a pinch of salt and freshly ground black pepper.
  4. In a large mixing bowl, combine the cooled farro, diced apple, diced celery, chopped walnuts, and chopped parsley. Pour the prepared dressing over the salad.
