- Green Beans (fresh or frozen) 125 g · 39 kcal

👨🍳 Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Add the green beans and diced potatoes to the pot, stirring well to coat them with the onion and garlic mixture. Continue to cook for 5 minutes, stirring occasionally.
- Pour in the crushed tomatoes and 250ml of water. Season generously with salt and black pepper, then bring the mixture to a gentle simmer.
- Cover the pot and let it simmer gently for 30-40 minutes, or until the green beans and potatoes are tender and the sauce has thickened slightly. Stir occasionally to prevent sticking.
- Just before serving, stir in the fresh chopped dill and parsley. Serve hot, optionally with a drizzle of fresh olive oil and a slice of feta cheese on the side.
