👨‍🍳 Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  2. Add the green beans and diced potatoes to the pot, stirring well to coat them with the onion and garlic mixture. Continue to cook for 5 minutes, stirring occasionally.
  3. Pour in the crushed tomatoes and 250ml of water. Season generously with salt and black pepper, then bring the mixture to a gentle simmer.
  4. Cover the pot and let it simmer gently for 30-40 minutes, or until the green beans and potatoes are tender and the sauce has thickened slightly. Stir occasionally to prevent sticking.
  5. Just before serving, stir in the fresh chopped dill and parsley. Serve hot, optionally with a drizzle of fresh olive oil and a slice of feta cheese on the side.
