👨🍳 Instructions
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until softened and translucent, about 5-7 minutes.
- Add minced garlic and cook for another minute until fragrant, being careful not to burn it. Stir in the green beans and diced potatoes.
- Pour in the crushed tomatoes and water. Season with salt and pepper to taste, then stir in the fresh dill and parsley.
- Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 40-50 minutes, or until the green beans and potatoes are very tender. Stir occasionally.
