🛒 Ingredients

  • Dried white beans 200 g · 680 kcal
  • Onions 200 g · 80 kcal
  • Garlic cloves 15 g · 22 kcal
  • Vegetable oil 50 g · 442 kcal

👨‍🍳 Instructions

  1. Soak the dried white beans overnight, then drain and rinse them thoroughly.
  2. Place the rinsed beans in a large pot, cover with fresh water, and boil until very tender (about 60-90 minutes).
  3. While beans are cooking, finely chop the onions and garlic.
  4. Heat half of the vegetable oil in a pan and sauté the chopped onions until deeply caramelized and golden brown.
  5. Drain the cooked beans, reserving some of the cooking liquid. Mash the beans with a potato masher or process in a food processor until smooth.
  6. Add the mashed garlic and half of the caramelized onions to the mashed beans. Stir in the remaining vegetable oil and season with salt and pepper to taste.
  7. If the mixture is too thick, gradually add some reserved bean cooking liquid until you reach a creamy consistency.
  8. Transfer the Fasole Batuta to a serving dish, garnish with the remaining caramelized onions, and serve warm or at room temperature.
