🛒 Ingredients
- Dried white beans 200 g · 680 kcal
- Onions 200 g · 80 kcal
- Garlic cloves 15 g · 22 kcal
- Vegetable oil 50 g · 442 kcal
👨🍳 Instructions
- Soak the dried white beans overnight, then drain and rinse them thoroughly.
- Place the rinsed beans in a large pot, cover with fresh water, and boil until very tender (about 60-90 minutes).
- While beans are cooking, finely chop the onions and garlic.
- Heat half of the vegetable oil in a pan and sauté the chopped onions until deeply caramelized and golden brown.
- Drain the cooked beans, reserving some of the cooking liquid. Mash the beans with a potato masher or process in a food processor until smooth.
- Add the mashed garlic and half of the caramelized onions to the mashed beans. Stir in the remaining vegetable oil and season with salt and pepper to taste.
- If the mixture is too thick, gradually add some reserved bean cooking liquid until you reach a creamy consistency.
- Transfer the Fasole Batuta to a serving dish, garnish with the remaining caramelized onions, and serve warm or at room temperature.
