👨🍳 Instructions
- Rinse dried kidney beans thoroughly and soak them in cold water overnight. The next day, drain and rinse the soaked beans.
- Cut the beef stew meat into 1-inch (2.5 cm) cubes. In a large pot or Dutch oven, heat the olive oil over medium-high heat and brown the beef cubes on all sides; remove and set aside.
- In the same pot, add the chopped onion and sauté until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
- Stir in the tomato paste and cook for 2-3 minutes, stirring constantly, to deepen its flavor. Add the diced tomatoes, allspice, black pepper, ground coriander, and bay leaves.
- Return the browned beef to the pot, add the soaked and drained kidney beans, and pour in enough water to cover all ingredients. Bring to a boil, then reduce heat, cover, and simmer for at least 2 hours, or until the beef and beans are very tender.
- Taste and adjust seasoning as needed (salt). Serve hot, traditionally over white rice, garnished with fresh parsley.
