👨‍🍳 Instructions

  1. Rinse dried kidney beans thoroughly and soak them in cold water overnight. The next day, drain and rinse the soaked beans.
  2. Cut the beef stew meat into 1-inch (2.5 cm) cubes. In a large pot or Dutch oven, heat the olive oil over medium-high heat and brown the beef cubes on all sides; remove and set aside.
  3. In the same pot, add the chopped onion and sauté until softened, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the tomato paste and cook for 2-3 minutes, stirring constantly, to deepen its flavor. Add the diced tomatoes, allspice, black pepper, ground coriander, and bay leaves.
  5. Return the browned beef to the pot, add the soaked and drained kidney beans, and pour in enough water to cover all ingredients. Bring to a boil, then reduce heat, cover, and simmer for at least 2 hours, or until the beef and beans are very tender.
  6. Taste and adjust seasoning as needed (salt). Serve hot, traditionally over white rice, garnished with fresh parsley.
