👨🍳 Instructions
- Soak white beans overnight in cold water; drain and rinse them thoroughly. This step is crucial for proper cooking and digestion.
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Add beef cubes and brown them on all sides, then remove the beef and set aside.
- Add chopped onion to the pot and sauté until softened and translucent, about 5-7 minutes. Stir in minced garlic and cook for another minute until fragrant.
- Return the browned beef to the pot. Add tomato paste and stir well, cooking for 2-3 minutes to deepen its flavor.
- Pour in the canned diced tomatoes and water (or broth). Add the drained, rinsed white beans and bay leaf. Bring the mixture to a boil.
- Reduce heat to low, cover the pot, and simmer for 1.5 to 2 hours, or until the beans and beef are very tender. Stir occasionally to prevent sticking.
- Season with salt and black pepper to taste. Remove the bay leaf before serving.
- Serve hot, garnished with fresh chopped parsley, traditionally with rice or crusty bread.
