👨‍🍳 Instructions

  1. Rinse the yellow split peas thoroughly under cold water; soaking them for at least 30 minutes, or up to a few hours, is optional but can help reduce cooking time.
  2. In a medium pot, heat about half of the olive oil over medium heat, then sauté the diced yellow onion until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
  3. Drain the split peas and add them to the pot along with enough cold water or vegetable broth to cover them by about two inches. Bring to a boil, then reduce heat, skim any foam, and simmer gently for 45-60 minutes, or until the peas are very tender and have mostly absorbed the liquid.
  4. Remove the pot from heat, stir in a portion of the lemon juice, and season with salt. Use an immersion blender or a food processor to blend the mixture until smooth and creamy, adding a little hot water if needed to reach your desired consistency.
  5. Serve the Fava warm, drizzled generously with the remaining olive oil, and garnish with finely chopped red onion and capers.
