👨🍳 Instructions
- Rinse the yellow split peas thoroughly under cold water; soaking them for at least 30 minutes, or up to a few hours, is optional but can help reduce cooking time.
- In a medium pot, heat about half of the olive oil over medium heat, then sauté the diced yellow onion until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.
- Drain the split peas and add them to the pot along with enough cold water or vegetable broth to cover them by about two inches. Bring to a boil, then reduce heat, skim any foam, and simmer gently for 45-60 minutes, or until the peas are very tender and have mostly absorbed the liquid.
- Remove the pot from heat, stir in a portion of the lemon juice, and season with salt. Use an immersion blender or a food processor to blend the mixture until smooth and creamy, adding a little hot water if needed to reach your desired consistency.
- Serve the Fava warm, drizzled generously with the remaining olive oil, and garnish with finely chopped red onion and capers.
