- Fresh Fava Beans (shelled) 250 g · 213 kcal

👨🍳 Instructions
- Shell the fresh fava beans; for very large beans, remove the inner membrane after blanching them in boiling water for 1-2 minutes, then shocking them in ice water.
- Finely chop the onion, dill, and mint.
- In a pot, sauté the chopped onion in olive oil over medium heat until softened, about 5-7 minutes.
- Add the shelled fava beans, salt, and sugar to the pot. Pour in enough hot water to just cover the beans.
- Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes, or until the beans are tender. Do not stir frequently to prevent breaking the beans.
- Once cooked, remove from heat and gently fold in the chopped dill and mint. Drizzle with fresh lemon juice.
- Let the dish cool completely to room temperature, then chill in the refrigerator for at least 2-3 hours before serving. Serve cold as a meze or side dish, garnished with extra fresh dill and lemon wedges.
