👨‍🍳 Instructions

  1. Shell the fresh fava beans; for very large beans, remove the inner membrane after blanching them in boiling water for 1-2 minutes, then shocking them in ice water.
  2. Finely chop the onion, dill, and mint.
  3. In a pot, sauté the chopped onion in olive oil over medium heat until softened, about 5-7 minutes.
  4. Add the shelled fava beans, salt, and sugar to the pot. Pour in enough hot water to just cover the beans.
  5. Bring to a boil, then reduce heat to low, cover, and simmer for 30-35 minutes, or until the beans are tender. Do not stir frequently to prevent breaking the beans.
  6. Once cooked, remove from heat and gently fold in the chopped dill and mint. Drizzle with fresh lemon juice.
  7. Let the dish cool completely to room temperature, then chill in the refrigerator for at least 2-3 hours before serving. Serve cold as a meze or side dish, garnished with extra fresh dill and lemon wedges.
