  1. Wash the fingerling potatoes thoroughly. Place them in a large pot, cover with cold water, and add a generous pinch of salt.
  2. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender when pierced with a fork. Drain and let cool slightly.
  3. Once cooled enough to handle, halve or quarter the fingerling potatoes, depending on their size, and place them in a large mixing bowl.
