  • Large Eggs 120 g · 180 kcal
  • Unsalted Butter 60 g · 430 kcal
  • Fresh Parsley 15 g · 6 kcal

👨‍🍳 Instructions

  1. Peel the white asparagus from just below the head down to the end; trim about 1-2 cm off the woody ends.
  2. Bring a large pot of salted water to a boil and cook the asparagus for 8-15 minutes until tender, depending on thickness; meanwhile, hard-boil the eggs for 9-10 minutes, then cool and peel them.
  3. While the asparagus cooks, finely chop the hard-boiled eggs and fresh parsley.
  4. In a small saucepan, gently melt the unsalted butter over low heat until just liquid.
  5. Drain the cooked asparagus well and arrange it on serving plates. Season with salt and pepper.
  6. Pour the melted butter evenly over the asparagus, then generously sprinkle with the chopped hard-boiled eggs and fresh parsley.
  7. Serve immediately as a main course or elegant side dish.
