Fozelek (Hungarian Vegetable Stew)

👨🍳 Instructions
- In a pot, sauté finely chopped onion in a little oil until translucent, then add minced garlic and cook for another minute.
- Stir in sweet paprika, immediately add green beans and water (or broth) to prevent paprika from burning, then season with salt.
- Bring to a boil, then reduce heat, cover, and simmer for 10-15 minutes or until green beans are tender.
- In a small bowl, whisk together flour and a tablespoon of sour cream until smooth to create a roux base.
- Gradually whisk a few spoonfuls of the hot stew liquid into the flour mixture to temper it, then slowly pour the tempered mixture back into the pot, stirring constantly until the fozelek thickens.
- Cook for a few more minutes, stirring, until the flour is cooked through and the fozelek reaches desired consistency; add vinegar to taste.
- Serve hot, optionally with an extra dollop of sour cream on top.
