  1. Rinse the freekeh thoroughly under cold water, then cook according to package instructions until tender but still slightly chewy (usually about 20-25 minutes). Drain any excess water and let it cool completely.
  2. While the freekeh cools, finely dice the cucumber, tomatoes, red bell pepper, and red onion. Roughly chop the fresh parsley and mint.
  3. In a large bowl, combine the cooled freekeh, diced vegetables, parsley, and mint. Toss gently to mix everything evenly.
