👨🍳 Instructions
- Rinse the freekeh thoroughly under cold water, then cook according to package instructions until tender but still slightly chewy (usually about 20-25 minutes). Drain any excess water and let it cool completely.
- While the freekeh cools, finely dice the cucumber, tomatoes, red bell pepper, and red onion. Roughly chop the fresh parsley and mint.
- In a large bowl, combine the cooled freekeh, diced vegetables, parsley, and mint. Toss gently to mix everything evenly.
- In a small separate bowl, whisk together the lemon juice, extra virgin olive oil, salt, and black pepper to create the dressing. Taste and adjust seasoning as needed.
- Pour the dressing over the freekeh and vegetable mixture. Toss again thoroughly to ensure all ingredients are well coated.
