  1. Wash the mixed berries thoroughly and remove any stems or leaves. For a smoother leather, you may strain the pureed fruit later.
  2. Place the prepared berries in a blender or food processor and blend until completely smooth. If desired, pass the puree through a fine-mesh sieve to remove seeds and pulp for an ultra-smooth texture.
  3. Line a large baking sheet with a silicone mat or parchment paper, ensuring it lies flat. Pour the fruit puree onto the prepared sheet and spread it evenly with an offset spatula to a thickness of about 1/8 to 1/4 inch (3-6 mm).
  4. Dehydrate the fruit puree in a food dehydrator according to its instructions, or in an oven set to its lowest temperature (e.g., 150°F / 65°C) with the door slightly ajar to allow moisture to escape, for 4-8 hours or until dry but still pliable.
  5. Once cooled completely, peel the fruit leather off the silicone mat or parchment paper. Cut it into strips, roll them up, and store in an airtight container at room temperature for up to 2 weeks, or refrigerate for longer storage.
