- Fava Beans (Dried, cooked) 250 g · 275 kcal

👨🍳 Instructions
- Rinse dried fava beans thoroughly and soak them in a large bowl of water overnight, or for at least 8-12 hours. The beans will significantly expand in size.
- Drain the soaked fava beans, transfer them to a large pot, and cover with fresh water. Bring to a boil, then reduce heat and simmer for 60-90 minutes until very tender.
- While the beans are cooking, finely mince the garlic and chop the fresh parsley, tomatoes, and onion for garnish. Squeeze the lemon juice.
- Once tender, drain most of the cooking liquid from the fava beans, leaving a small amount. Mash the beans roughly with a fork or potato masher, leaving some whole. Stir in the minced garlic, ground cumin, lemon juice, and salt to taste.
- Transfer the Ful Medames to a serving bowl, create a well in the center, and generously drizzle with extra virgin olive oil. Garnish with chopped parsley, diced tomatoes, and diced onion.
