👨‍🍳 Instructions

  1. Rinse dried fava beans thoroughly and soak them in a large bowl of water overnight, or for at least 8-12 hours. The beans will significantly expand in size.
  2. Drain the soaked fava beans, transfer them to a large pot, and cover with fresh water. Bring to a boil, then reduce heat and simmer for 60-90 minutes until very tender.
  3. While the beans are cooking, finely mince the garlic and chop the fresh parsley, tomatoes, and onion for garnish. Squeeze the lemon juice.
  4. Once tender, drain most of the cooking liquid from the fava beans, leaving a small amount. Mash the beans roughly with a fork or potato masher, leaving some whole. Stir in the minced garlic, ground cumin, lemon juice, and salt to taste.
  5. Transfer the Ful Medames to a serving bowl, create a well in the center, and generously drizzle with extra virgin olive oil. Garnish with chopped parsley, diced tomatoes, and diced onion.
