👨🍳 Instructions
- Wash the eggplant, trim the ends, and cut it lengthwise into 2-inch pieces, then slice each piece into thin strips.
- Steam the eggplant strips for 5-7 minutes until tender but not mushy, then immediately transfer to a bowl of ice water to stop cooking.
- Drain the eggplant well, gently squeezing out excess water with your hands, then place it in a mixing bowl.
- Add minced garlic, soy sauce, sesame oil, and chopped green onion to the bowl with the eggplant.
- Gently massage the seasonings into the eggplant by hand for 1-2 minutes, ensuring everything is well combined.
