  1. Wash the bok choy thoroughly, separate the leaves, and chop the larger stems and leaves into manageable pieces. Mince the garlic cloves.
  2. Heat vegetable oil in a large wok or skillet over medium-high heat. Add the minced garlic and stir-fry for about 30 seconds until fragrant, being careful not to burn it.
  3. Add the bok choy stems first and stir-fry for 1-2 minutes until they start to soften. Then add the bok choy leaves and continue to stir-fry.
  4. Pour in the soy sauce and water/broth. Stir well to combine and cook for another 2-3 minutes, until the bok choy is tender-crisp and the sauce has slightly reduced.
  5. Remove from heat, drizzle with sesame oil, and toss gently. Serve immediately as a flavorful side dish.
