👨🍳 Instructions
- Soak the dried giant beans in cold water overnight (8-12 hours) to soften them, then drain and rinse thoroughly.
- Place the soaked beans in a large pot, cover with fresh water, bring to a boil, then reduce heat and simmer for 45-60 minutes until tender but still firm to the bite; drain well.
- Preheat your oven to 180°C (350°F). In a large oven-safe pot or pan, heat olive oil over medium heat.
- Add the chopped onion to the pot and sauté for 5-7 minutes until softened, then add the minced garlic and cook for another minute until fragrant.
- Stir in the crushed tomatoes, tomato paste, vegetable broth, bay leaf, salt, and pepper; bring the sauce to a gentle simmer.
- Add the par-boiled beans, fresh dill, and parsley to the sauce, stirring gently to combine all ingredients.
- Transfer the pot to the preheated oven and bake for 45-60 minutes, or until the sauce has thickened and the beans are very tender.
- Serve Gigantes Plaki warm, optionally garnished with extra fresh parsley or dill and a drizzle of olive oil.
