👨🍳 Instructions
- If using dried maize and beans, soak them overnight separately, then boil until tender; drain and set aside.
- Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until translucent, about 5-7 minutes.
- Stir in chopped tomatoes and cook for another 5-10 minutes, pressing them down to break apart, until they form a thick sauce.
- Add chopped carrots to the pot and cook for about 5 minutes, stirring occasionally, until they start to soften slightly.
- Add the pre-cooked maize and kidney beans to the pot. Mix everything well to combine with the sautéed vegetables.
- Pour in enough water or vegetable broth to just cover the mixture. Season generously with salt and pepper to taste.
- Bring the stew to a simmer, then reduce heat to low, cover, and let it cook for at least 20-30 minutes, allowing the flavors to meld beautifully.
- During the last 5-10 minutes of cooking, stir in the fresh spinach (or other greens) until it wilts and incorporates into the stew. Serve Githeri hot.
