👨‍🍳 Instructions

  1. If using dried maize and beans, soak them overnight separately, then boil until tender; drain and set aside.
  2. Heat vegetable oil in a large pot or Dutch oven over medium heat. Add chopped onion and sauté until translucent, about 5-7 minutes.
  3. Stir in chopped tomatoes and cook for another 5-10 minutes, pressing them down to break apart, until they form a thick sauce.
  4. Add chopped carrots to the pot and cook for about 5 minutes, stirring occasionally, until they start to soften slightly.
  5. Add the pre-cooked maize and kidney beans to the pot. Mix everything well to combine with the sautéed vegetables.
  6. Pour in enough water or vegetable broth to just cover the mixture. Season generously with salt and pepper to taste.
  7. Bring the stew to a simmer, then reduce heat to low, cover, and let it cook for at least 20-30 minutes, allowing the flavors to meld beautifully.
  8. During the last 5-10 minutes of cooking, stir in the fresh spinach (or other greens) until it wilts and incorporates into the stew. Serve Githeri hot.
