👨🍳 Instructions
- Heat vegetable oil in a large pot or karahi over medium heat, then add cumin seeds and let them splutter.
- Add diced onion and green chilies, sauté until the onion turns translucent and lightly golden.
- Stir in ginger-garlic paste and cook for another minute until fragrant.
- Add diced tomatoes, turmeric powder, coriander powder, and red chili powder, cooking until tomatoes soften and oil separates.
- Add cauliflower florets and cubed potatoes, mix well with the masala, and add about 1/4 cup of water.
- Cover and cook on low heat for 15-20 minutes, or until potatoes and cauliflower are tender, stirring occasionally.
- Add chopped fresh spinach and garam masala, cook for another 5-7 minutes until the spinach wilts and blends into the curry.
- Season with salt to taste, stir well, and serve hot, optionally garnished with fresh coriander.
