👨‍🍳 Instructions

  1. Heat vegetable oil in a large pot or karahi over medium heat, then add cumin seeds and let them splutter.
  2. Add diced onion and green chilies, sauté until the onion turns translucent and lightly golden.
  3. Stir in ginger-garlic paste and cook for another minute until fragrant.
  4. Add diced tomatoes, turmeric powder, coriander powder, and red chili powder, cooking until tomatoes soften and oil separates.
  5. Add cauliflower florets and cubed potatoes, mix well with the masala, and add about 1/4 cup of water.
  6. Cover and cook on low heat for 15-20 minutes, or until potatoes and cauliflower are tender, stirring occasionally.
  7. Add chopped fresh spinach and garam masala, cook for another 5-7 minutes until the spinach wilts and blends into the curry.
  8. Season with salt to taste, stir well, and serve hot, optionally garnished with fresh coriander.
