- Wash the spinach thoroughly, then blanch it in boiling salted water for 1-2 minutes until tender. Immediately transfer the spinach to an ice bath to stop cooking and preserve its vibrant color.
- Squeeze out as much excess water from the blanched spinach as possible, forming it into a compact ball or log. Cut the spinach into 2-3 cm (about 1 inch) pieces.
- In a small bowl, combine the ground toasted sesame seeds, soy sauce, granulated sugar, and mirin. Mix well until the sugar is dissolved and the sauce is smooth.
- Add the prepared spinach to the sesame dressing and gently toss until the spinach is evenly coated. Serve immediately or chill for a refreshing side dish.
