👨‍🍳 Instructions

  1. Thoroughly wash the collard greens, remove tough stems, and finely chop the leaves. Mince the garlic and ginger, and finely dice the onion.
  2. Heat vegetable oil in a large pot or Dutch oven over medium heat. Add the diced onion and sauté until softened and translucent, about 5-7 minutes.
  3. Add the minced garlic and ginger to the pot and cook for another minute until fragrant, being careful not to burn them. Stir in the Berbere spice blend and cook for 1-2 minutes, allowing the spices to bloom.
  4. Add the chopped collard greens to the pot, in batches if necessary, and stir until they begin to wilt. Pour in about 1/2 cup of water, cover the pot, and reduce heat to low.
  5. Simmer for 30-40 minutes, or until the collard greens are very tender, stirring occasionally. Season with salt to taste before serving.
