👨🍳 Instructions
- Combine wheat flour, water, 20g olive oil, and a pinch of salt in a bowl; knead until a smooth, elastic dough forms, then cover and let it rest for 30 minutes.
- Meanwhile, sauté chopped onion in 10g olive oil until softened, then add spinach and cook until wilted, seasoning with black pepper; remove from heat and let cool.
- Once cooled, crumble feta cheese into the spinach and onion mixture, then gently mix to combine.
- Divide the dough into 4 equal portions; on a lightly floured surface, roll out each portion into a very thin, rectangular or oval shape.
- Spread a quarter of the spinach and feta mixture over one half of each rolled-out dough, leaving a small border, then fold the other half over the filling to create a half-moon shape.
- Seal the edges of the gozleme by gently pressing with your fingers or a fork, ensuring the filling is completely enclosed.
- Heat a large non-stick pan or griddle over medium heat, then cook each gozleme for 3-5 minutes per side, or until golden brown and crispy, brushing lightly with olive oil during cooking.
- Serve the gozleme hot, optionally sliced into smaller pieces.
