  1. Combine wheat flour, water, 20g olive oil, and a pinch of salt in a bowl; knead until a smooth, elastic dough forms, then cover and let it rest for 30 minutes.
  2. Meanwhile, sauté chopped onion in 10g olive oil until softened, then add spinach and cook until wilted, seasoning with black pepper; remove from heat and let cool.
  3. Once cooled, crumble feta cheese into the spinach and onion mixture, then gently mix to combine.
  4. Divide the dough into 4 equal portions; on a lightly floured surface, roll out each portion into a very thin, rectangular or oval shape.
  5. Spread a quarter of the spinach and feta mixture over one half of each rolled-out dough, leaving a small border, then fold the other half over the filling to create a half-moon shape.
  6. Seal the edges of the gozleme by gently pressing with your fingers or a fork, ensuring the filling is completely enclosed.
  7. Heat a large non-stick pan or griddle over medium heat, then cook each gozleme for 3-5 minutes per side, or until golden brown and crispy, brushing lightly with olive oil during cooking.
