👨‍🍳 Instructions

  1. Preheat oven to 160°C (325°F) and line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
  2. In a large bowl, combine the rolled oats, chopped almonds, dried cranberries, and salt.
  3. In a separate microwave-safe bowl, combine peanut butter, honey, and coconut oil. Heat in the microwave for 30-60 seconds, or until melted and smooth, stirring well. Stir in the vanilla extract.
  4. Pour the wet mixture over the dry ingredients and mix thoroughly until everything is evenly coated.
  5. Press the mixture firmly and evenly into the prepared baking pan using a spatula or the back of a spoon.
  6. Bake for 20-25 minutes, until the edges are lightly golden brown.
  7. Let the granola bars cool completely in the pan on a wire rack for at least 2-3 hours (or chill in the refrigerator for 30 minutes) before lifting out and cutting into 12 bars.
