👨🍳 Instructions
- Preheat oven to 160°C (325°F) and line an 8x8 inch baking pan with parchment paper, leaving an overhang on the sides.
- In a large bowl, combine the rolled oats, chopped almonds, dried cranberries, and salt.
- In a separate microwave-safe bowl, combine peanut butter, honey, and coconut oil. Heat in the microwave for 30-60 seconds, or until melted and smooth, stirring well. Stir in the vanilla extract.
- Pour the wet mixture over the dry ingredients and mix thoroughly until everything is evenly coated.
- Press the mixture firmly and evenly into the prepared baking pan using a spatula or the back of a spoon.
- Bake for 20-25 minutes, until the edges are lightly golden brown.
- Let the granola bars cool completely in the pan on a wire rack for at least 2-3 hours (or chill in the refrigerator for 30 minutes) before lifting out and cutting into 12 bars.
