👨‍🍳 Instructions

  1. Trim the ends of the green beans and chop them into small, even pieces (about 1-inch long); set aside. Peel and finely chop the onion and green chili.
  2. Blanch or steam the chopped green beans until they are tender-crisp, about 5-7 minutes. Drain well and set aside.
  3. Heat coconut oil in a large pan or kadai over medium heat. Add mustard seeds and allow them to splutter, then add urad dal and fry until golden brown.
  4. Add curry leaves, chopped green chili, and chopped onion to the pan. Sauté until the onion turns translucent.
  5. Stir in the cooked green beans, turmeric powder, and salt. Mix gently to combine all ingredients evenly.
  6. Finally, add the fresh grated coconut and give it a quick stir. Cook for another minute, then remove from heat.
  7. Serve Green Bean Poriyal warm as a delightful side dish with rice, roti, or any South Indian meal.
