👨🍳 Instructions
- Trim the ends of the green beans and chop them into small, even pieces (about 1-inch long); set aside. Peel and finely chop the onion and green chili.
- Blanch or steam the chopped green beans until they are tender-crisp, about 5-7 minutes. Drain well and set aside.
- Heat coconut oil in a large pan or kadai over medium heat. Add mustard seeds and allow them to splutter, then add urad dal and fry until golden brown.
- Add curry leaves, chopped green chili, and chopped onion to the pan. Sauté until the onion turns translucent.
- Stir in the cooked green beans, turmeric powder, and salt. Mix gently to combine all ingredients evenly.
- Finally, add the fresh grated coconut and give it a quick stir. Cook for another minute, then remove from heat.
