  1. Prepare artichokes: Trim off the stems and about an inch from the top leaves. Remove the tough outer leaves until you reach the more tender, pale green ones. Cut each artichoke in half lengthwise.
  2. Scoop out the fuzzy choke from the center of each half using a spoon or melon baller, and discard any small, purple inner leaves.
  3. Pre-cook artichokes: In a large pot of heavily salted boiling water, or using a steamer, cook the artichoke halves for 20-30 minutes, or until tender when pierced with a fork. Drain well and let cool slightly.
  4. Season: In a small bowl, whisk together the olive oil, minced garlic, and lemon juice. Brush the cut sides of the pre-cooked artichoke halves generously with this mixture, ensuring they are well coated.
  5. Grill: Preheat a grill or grill pan to medium-high heat. Place the seasoned artichokes cut-side down on the hot grill and cook for 4-6 minutes, until distinct grill marks appear and they are slightly charred.
  6. Finish: Flip the artichokes and grill on the other side for another 4-6 minutes until tender throughout. Serve immediately, optionally garnished with fresh parsley.
