  1. Clean the cuttlefish thoroughly, removing the ink sac, beak, and internal organs. Rinse well and pat dry with paper towels.
  2. Score the body of the cuttlefish in a crosshatch pattern without cutting all the way through; this helps it cook evenly and absorb flavor.
  3. In a bowl, toss the cuttlefish with olive oil, minced garlic, a squeeze of lemon juice, salt, and black pepper. Let it marinate for at least 15-20 minutes.
  4. Preheat a grill or grill pan to medium-high heat. Once hot, place the cuttlefish on the grill.
  5. Grill for 3-5 minutes per side, depending on thickness, until opaque and slightly charred with nice grill marks. Be careful not to overcook, or it will become rubbery.
  6. Remove from the grill, squeeze fresh lemon juice over it, and garnish with freshly chopped parsley before serving immediately.
