- Clean the cuttlefish thoroughly, removing the ink sac, beak, and internal organs. Rinse well and pat dry with paper towels.
- Score the body of the cuttlefish in a crosshatch pattern without cutting all the way through; this helps it cook evenly and absorb flavor.
- In a bowl, toss the cuttlefish with olive oil, minced garlic, a squeeze of lemon juice, salt, and black pepper. Let it marinate for at least 15-20 minutes.
- Preheat a grill or grill pan to medium-high heat. Once hot, place the cuttlefish on the grill.
- Grill for 3-5 minutes per side, depending on thickness, until opaque and slightly charred with nice grill marks. Be careful not to overcook, or it will become rubbery.
- Remove from the grill, squeeze fresh lemon juice over it, and garnish with freshly chopped parsley before serving immediately.
