👨‍🍳 Instructions

  1. Pat the eel fillets dry thoroughly with paper towels and score the skin side lightly with a sharp knife if desired.
  2. Combine soy sauce, mirin, sake, sugar, and water in a saucepan; bring to a simmer and cook until slightly thickened, forming the kabayaki sauce.
  3. Preheat a grill to medium-high heat and lightly oil the grill grates.
  4. Grill the eel skin-side down for 3-4 minutes until crisp, then flip and grill flesh-side down for another 3-4 minutes.
  5. Brush the eel generously with the kabayaki sauce and continue grilling, flipping and basting every 1-2 minutes, until the eel is cooked through and beautifully glazed.
  6. Remove the grilled eel from the heat and serve immediately, optionally garnished with sansho pepper or toasted sesame seeds.
