👨🍳 Instructions
- Pat the quails dry with paper towels. Butterfly each quail by cutting along the backbone to flatten it, or leave them whole if preferred.
- In a bowl, combine olive oil, minced garlic, lemon zest and juice, chopped rosemary and thyme, salt, and black pepper to create the marinade.
- Place the quails in the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or preferably 2-4 hours, allowing the flavors to meld.
- Preheat your grill to medium-high heat (about 200-230°C or 400-450°F). Lightly oil the grill grates to prevent sticking.
- Place the marinated quails on the hot grill, skin-side down first. Grill for 4-6 minutes per side, turning once, until cooked through and nicely charred.
- Remove the grilled quails from the grill and let them rest for 5 minutes before serving. Garnish with fresh lemon wedges and herbs.
