👨‍🍳 Instructions

  1. Pat the quails dry with paper towels. Butterfly each quail by cutting along the backbone to flatten it, or leave them whole if preferred.
  2. In a bowl, combine olive oil, minced garlic, lemon zest and juice, chopped rosemary and thyme, salt, and black pepper to create the marinade.
  3. Place the quails in the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or preferably 2-4 hours, allowing the flavors to meld.
  4. Preheat your grill to medium-high heat (about 200-230°C or 400-450°F). Lightly oil the grill grates to prevent sticking.
  5. Place the marinated quails on the hot grill, skin-side down first. Grill for 4-6 minutes per side, turning once, until cooked through and nicely charred.
  6. Remove the grilled quails from the grill and let them rest for 5 minutes before serving. Garnish with fresh lemon wedges and herbs.
