👨🍳 Instructions
- Blanch spinach in hot water for 2-3 minutes, then immediately transfer to ice-cold water to retain color. Squeeze out excess water thoroughly and chop finely.
- Boil green peas until tender, then mash them coarsely. Separately, boil and mash potatoes.
- In a large bowl, combine chopped spinach, mashed green peas, mashed potatoes, crumbled paneer, ginger-garlic paste, green chilies, and fresh coriander leaves.
- Add roasted gram flour (besan), breadcrumbs, garam masala, cumin powder, chaat masala, and salt to the mixture. Mix everything well until a cohesive dough forms.
- Divide the mixture into equal portions and shape them into small, flat patties or kababs. You can press a cashew or almond lightly into the center of each kabab for garnish.
- Heat cooking oil in a shallow pan or skillet over medium heat. Shallow fry the kababs until they are golden brown and crisp on both sides.
- Serve Hara Bhara Kabab hot with mint chutney or tomato ketchup.
