- Fresh hawthorn fruit 500 g · 225 kcal

👨🍳 Instructions
- Wash hawthorn fruits thoroughly, remove stems and blossom ends, then cut in half to prepare for coring.
- Place the cored hawthorn halves in a pot with water, bring to a boil, then simmer for about 15-20 minutes until very soft.
- Drain the softened hawthorn, then mash it into a smooth pulp using a fork or by pushing it through a fine-mesh sieve.
- Return the hawthorn pulp to the pot, add granulated sugar, and cook over medium-low heat, stirring constantly, until the mixture thickens and pulls away from the sides of the pot (about 10-15 minutes).
- Spread the thickened hawthorn mixture thinly and evenly onto a parchment-lined baking sheet or silicone mat.
- Let it cool completely at room temperature or in a dehydrator until firm and non-sticky, usually several hours or overnight.
- Once firm, peel the hawthorn sheet from the parchment, then cut it into desired shapes, typically small discs or strips, to form the flakes.
