👨‍🍳 Instructions

  1. To make the shortcrust pastry, combine flour and cold butter in a bowl, rubbing with fingertips until it resembles breadcrumbs. Gradually add cold water and mix until a dough forms, then wrap and chill for 30 minutes.
  2. While the pastry chills, boil the potatoes until tender, then drain and mash them with a splash of milk. Season generously with salt and pepper.
  3. Sauté the finely chopped onion and minced garlic in olive oil over medium heat until softened and lightly golden, about 8-10 minutes.
  4. Grate the mature Cheddar cheese and finely chop the fresh chives.
  5. In a large bowl, combine the mashed potatoes, sautéed onion and garlic, grated Cheddar, cream cheese, and chopped chives. Mix thoroughly and adjust seasoning if needed.
  6. Roll out the chilled pastry on a lightly floured surface and carefully line a 20-22 cm pie dish. Trim any excess pastry and crimp the edges for decoration.
  7. Fill the pastry shell with the potato and cheese mixture, spreading it evenly.
  8. Bake in a preheated oven at 180°C (350°F) for 35-40 minutes, or until the pastry is golden brown and the filling is hot and bubbly.
  9. Let the pie cool slightly before serving to allow the filling to set.
