  1. Drain the canned jackfruit thoroughly and rinse well. Use your hands or two forks to shred the jackfruit, removing any tough core pieces, to resemble pulled pork.
  2. Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until softened, about 5-7 minutes, then add minced garlic, smoked paprika, cumin, and black pepper, cooking for another minute until fragrant.
  3. Stir in the shredded jackfruit, BBQ sauce, and apple cider vinegar. Bring to a simmer, then reduce heat to low, cover, and cook for 15-20 minutes, stirring occasionally, until the jackfruit is tender and has absorbed the flavors.
  4. Lightly toast the hamburger buns. Pile a generous amount of the BBQ jackfruit mixture onto the bottom bun, then top with the other bun half and serve immediately.
