  1. Bring water to a boil in a saucepan, then immediately remove from heat.
  2. In a mixing bowl, combine the sorghum flour with a pinch of salt. Gradually add the hot water, mixing with a spoon until a shaggy dough forms.
  3. Once cool enough to handle, knead the dough thoroughly for 5-7 minutes until it becomes smooth and pliable. Divide the dough into equal portions.
  4. Lightly dust a clean surface with sorghum flour. Take one portion of dough and gently pat or roll it out into a thin, round roti (about 6-7 inches in diameter).
  5. Heat a tawa (griddle) over medium-high heat. Place the roti on the hot tawa and cook for about 30 seconds until small bubbles appear.
  6. Flip the roti and cook for another minute until brown spots appear. Flip again and press gently with a clean cloth or spatula to help it puff up, cooking until fully done.
  7. Serve Jolada Roti hot with your favorite curries, chutneys, or yogurt.
