- Sorghum flour (Jowar Atta) 50 g · 170 kcal

- Bring water to a boil in a saucepan, then immediately remove from heat.
- In a mixing bowl, combine the sorghum flour with a pinch of salt. Gradually add the hot water, mixing with a spoon until a shaggy dough forms.
- Once cool enough to handle, knead the dough thoroughly for 5-7 minutes until it becomes smooth and pliable. Divide the dough into equal portions.
- Lightly dust a clean surface with sorghum flour. Take one portion of dough and gently pat or roll it out into a thin, round roti (about 6-7 inches in diameter).
- Heat a tawa (griddle) over medium-high heat. Place the roti on the hot tawa and cook for about 30 seconds until small bubbles appear.
- Flip the roti and cook for another minute until brown spots appear. Flip again and press gently with a clean cloth or spatula to help it puff up, cooking until fully done.
- Serve Jolada Roti hot with your favorite curries, chutneys, or yogurt.
