👨‍🍳 Instructions

  1. In a large bowl, whisk together gram flour, 240ml water, lemon juice, ginger-green chili paste, 20g sugar, 8g salt, and turmeric powder until a smooth, lump-free batter is formed.
  2. Grease a steaming pan or plate with oil. Just before steaming, add the fruit salt (Eno) to the batter and gently mix until frothy; do not overmix.
  3. Immediately pour the frothy batter into the greased pan and steam for 15-20 minutes over medium-high heat, or until a toothpick inserted comes out clean. Let it cool slightly.
  4. For the tempering, heat the cooking oil in a small pan. Add mustard seeds and let them splutter. Then add sesame seeds, curry leaves, and green chilies, and sauté for a minute.
  5. Add 60ml water, 10g sugar, and 2g salt to the tempering mixture and bring to a boil. Pour this hot tempering over the cooled dhokla.
  6. Cut the dhokla into squares or diamond shapes. Garnish with fresh chopped cilantro and serve warm with green chutney.
