👨‍🍳 Instructions

  1. Wash and boil beets until tender, then let them cool, peel, and grate or finely dice them. Set aside a small amount of the beet cooking liquid (kvass) if desired.
  2. Boil eggs until hard-boiled, cool them under cold water, peel, and finely chop. Finely chop fresh cucumbers, dill, and green onions.
  3. In a large bowl, combine the diced beets, cucumbers, chopped eggs, dill, and green onions. Gently mix all the ingredients.
  4. Pour in the low-fat kefir (or buttermilk) and stir well until all ingredients are evenly distributed. Add a splash of beet cooking liquid (kvass) if you want a deeper pink color.
  5. Season with salt to taste, adding a squeeze of lemon juice or a dash of vinegar for extra tanginess if desired. Chill the kholodnik in the refrigerator for at least 1-2 hours before serving.
