  1. Grate the zucchini, place it in a colander, sprinkle with 1 teaspoon of salt, and let it sit for 15-20 minutes to draw out excess moisture. Squeeze the grated zucchini very thoroughly using a clean kitchen towel to remove as much liquid as possible.
  2. Finely chop the onion, garlic, fresh mint, dill, and parsley. In a large bowl, crumble the feta cheese.
  3. Add the squeezed zucchini, chopped onion, garlic, herbs, eggs, flour, and baking powder to the bowl with the feta. Mix until all ingredients are just combined into a thick batter.
  4. Heat a generous amount of olive oil in a large non-stick pan over medium heat. Drop spoonfuls of the mixture into the hot oil, gently flattening them into fritter shapes. Be careful not to overcrowd the pan.
