  1. Soak the dry white beans in plenty of cold water overnight, then drain and rinse them thoroughly.
  2. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced beef and brown it on all sides.
  3. Add the chopped onions to the pot and sauté until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
  4. Stir in the tomato paste and red pepper paste, cooking for 2-3 minutes to deepen their flavor.
  5. Add the drained beans to the pot. Pour in enough water or broth to cover the beans by about 2-3 inches, then bring to a boil.
  6. Reduce the heat to low, cover the pot, and simmer for 2-3 hours, or until the beans and beef are very tender. Stir occasionally and add more water if needed to maintain desired consistency.
  7. Season with salt and black pepper to taste. Serve hot, traditionally with rice pilaf and pickles.
