👨🍳 Instructions
- Soak the dry white beans in plenty of cold water overnight, then drain and rinse them thoroughly.
- In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced beef and brown it on all sides.
- Add the chopped onions to the pot and sauté until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Stir in the tomato paste and red pepper paste, cooking for 2-3 minutes to deepen their flavor.
- Add the drained beans to the pot. Pour in enough water or broth to cover the beans by about 2-3 inches, then bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 2-3 hours, or until the beans and beef are very tender. Stir occasionally and add more water if needed to maintain desired consistency.
- Season with salt and black pepper to taste. Serve hot, traditionally with rice pilaf and pickles.
