- Mung Bean Starch 50 g · 175 kcal

👨🍳 Instructions
- In a saucepan, whisk together mung bean starch and 1.5 cups (300ml) of cold water until smooth. Cook over medium heat, stirring constantly, until the mixture thickens and becomes translucent, forming a thick paste.
- Pour the hot paste into a shallow dish or mold and spread evenly. Let it cool completely at room temperature, then refrigerate for at least 1-2 hours until firm and jelly-like.
- Once firm, carefully unmold the mung bean jelly onto a cutting board and slice it into thin, noodle-like strips or small cubes.
- In a separate bowl, combine minced garlic, grated ginger, chopped green onions, chopped cilantro, soy sauce, black vinegar, sesame oil, and chili oil. Mix well to create the sauce.
- Place the Laping noodles/cubes in a serving bowl, then generously pour the prepared spicy sauce over them. Toss gently to coat all the noodles evenly.
- Serve Laping immediately as a refreshing and spicy cold dish. Garnish with extra cilantro or green onions if desired.
